Easter has to be one of my absolute favorite holidays all the way around. For the obvious reason, Resurrection Sunday, Lord Jesus Christ rising from the dead. But also, from the food, switching from heavy, hardy stews to light, colorful salads and shedding the layers of sundresses. It definitely sets the tone for the Spring season!
John over on the Preppy Kitchen blog is the mastermind behind these cutie bird’s nest cookies. He whipped them up a few weeks ago and I thought they were the perfect mixture of Easter and Spring, so I decided to make them for our office Easter luncheon this week! The only things I tweaked from John’s recipe was using royal icing instead of buttercream, and I cheated on the eggs by just buying Whopper Robin Eggs versus making my own. (I am a firm believer in semi-homemade!)
OH, I almost forgot! The most important part of this recipe is the non-spreading sugar cookie recipe. You guys. My life mission of finding the perfect sugar cookie recipe is over. John nailed it on these cookies by using cornstarch to prevent the cookie from spreading as it bakes. Genius!
