Mint Brownie Bites

I am sure you are all aware by now that I have been on a little bit of a brownie kick lately, and I am still taken back by it! I am a cupcake lover through and through, however, I am digging all of these amazing brownie recipes this spring. Also, I found out that 55% of you on Insta voted brownie versus cupcake! ( So apparently I need to love brownies a tad bit more, but not TOO much more! )

St.Patrick’s day snuck up on me this year, due to my planning for Spring and Easter as well as our Anniversary trip, which actually falls on St.Paty’s day, it seemed to just get pushed to the side. This past weekend though I used a crawfish boil as an opportunity to try these guys out and have my friends taste test! Which I knew no one would oppose to. (;

These brownie bites are a blank canvas for so many different flavor combos. You could press your favorite candies (peanut butter cups, rolos, etc.) in the middle of them when they come out of the oven. Drizzle them with white chocolate and top with rainbow sprinkles. The list could go on!

For this recipe though, you can make these brownie bites as minty as you would like, and even go as far as adding dinner mints crumbled in the frosting, yummmmm-o. However, I am not the biggest fan of over minty desserts, so I barely, I mean BARELY put any mint extract into the frosting. So little that Zac and I had a back and forth whether there was any mint actually in it!

Mint Brownie Bites

  • Prep Time: 15m
  • Cook Time: 12m
  • Yield: 30 brownie bites

Ingredients

Brownie Bites

  • 1 1/3 c all purpose flour
  • 1/3 c unsweetened cocoa powder
  • 1/2 tsp. baking soda
  • 1/4 tsp. salt
  • 1/2 c unsalted butter, softened
  • 1/2 c light brown sugar
  • 1/2 c sugar
  • 1 egg
  • 1 tsp. vanilla extract

Mint Frosting

  • 1/2 c unsalted butter, softened
  • 1 1/2 c confectionery sugar
  • 1 tsp. heavy cream or milk
  • 1/2 tsp. mint/peppermint extract
  • green food coloring (optional)

Instructions

  • Preheat oven to 350 degrees F.
  • Mix butter and sugar. Once light and fluffy add in one large egg and vanilla.
  • Mix dry ingredients in a separate bowl. Once mixed well, slowly add to the wet ingredients.
  • Before adding batter to mini muffin tins, be sure to spray your tins to prevent sticking. This recipe made roughly 30 brownie bites.
  • Optional Icing : Mix together butter and confectionary sugar. When mixed slowly add in milk, food coloring (optional) and mint extract.
