Every Christmas Zac and I make homemade cinnamon rolls, and last year when we delivered Ashlyn and Jared their pan of rolls she gave me a tin of bright red and green cookies. Me being the baker I am, just could not wait to get home to try out these new cookies, I busted open the tin while we were pulling out of the driveway and oh my goodness, so light, so fluffy and so addictive! What was even better was when Ash shared the recipe with me I was floored at this crazy cookie and how simple it is.
Ashlyn and I worked at Hughes Florist here in town all throughout school and became such great friends. We use to giggle and talk about one-day becoming actual family, and now look where we are! She has a beautiful baby girl, Zayne, that I have enjoyed so much watching grow and I know Ash will be making these fun cookies with her this holiday season. If she can get her to sit still long enough. 😉

- Yield: 2 dozen cookies
Ingredients
- 1 box of your favorite white cake mix, or if you have a homemade white cake mix recipe, even better
- 1 egg
- 1 tub of original cool whip (equal to 3 cups)
- 1 tsp. vanilla extract
- 1 c powdered sugar
- 1/2 tsp. of both red and green food coloring
Instructions
- Preheat oven to 350 degrees. In a large bowl mix the white cake mix, egg, vanilla, and cool whip (will be very sticky and thick).
- Once mixed, halve the dough into two separate bowls. In one bowl add red food coloring to desired color. Add the green food coloring to other bowl to desired color.
- Spoon out cookie dough one at a time (these cookies do expand please be mindful of that and space at least 2 inches apart). Roll cookie dough into powdered sugar and coat all over until you have a rounded dough ball. Place each on lined cookie sheet at least 2 inches apart. Bake for 12-15 minutes, remove from oven let cool for atleast 5 minutes before trying to move to a cooling rack.
- Warning: Very messy but so fun to make with children, the bigger the mess, the bigger the memory made! Happy Holidays!
