Aunt Kerri’s baking situation is a lot like my Aunt Cheri’s, but instead of calling Noni she calls Sarah Lee! Again, do you blame her? My aunts are very very similar, and when they get together they giggle like school girls for hours on end. They both give you this welcoming feeling when they enter a room and the sense that they have known you forever even it is your first time meeting them.
No bake cookies are a quick and easy recipe that you can whip up for any of those last minute Christmas parties, and you guessed it no baking required. I often make these cookies when I do not have time to run to the store for those funny little ingredients and I almost always have all of these in my pantry.

- Yield: 24 cookies
Ingredients
- 2 c granulated sugar
- 4 tbsp. cocoa
- 1 stick butter
- 1/2 c milk
- 1 c peanut butter
- 1 tsp. vanilla extract
- 3 1/4 c quick cook oats
Instructions
- Pull out all your ingredients and line two cookie sheets with foil or parchment paper.
- In a medium sized sauce pan combine sugar, butter, cocoa and milk. Heat until boiling and then stir while boiling for one minute.
- Add peanut butter, vanilla, and oats and stir until combined.
- Drop by spoonfuls onto your prepared cookie sheets and refrigerate until hardened. Serve and enjoy!
